Believe By Jukes with Slip Soles
Our newly released Believe By Jukes is a wonder with any number of dishes. Only the other day, I opened a bottle in a restaurant, and my guests ordered some eight dishes between them, ranging from a burrata salad, some gnocchi, a chicken leg, a cod dish with olives, pumpkin soup, a risotto, a duck and chicory salad, and a Dover sole.
Believe aced every challenge, but it was the sole dish that really stuck in my mind. Here is an effortless dish that takes only a couple of minutes to prepare, and it is nothing short of heaven with Believe!

Ingredients
2/3 Slip Soles per person, depending on the size, or a Lemon Sole filleted and skinned, and each side halved along the centre
Finely chopped Flat-Leaf Parsley
Extra Virgin Olive Oil
Butter
1 Lemon – juice half and cut the other half into wedges
Sea Salt
Cracked Black Pepper
Plain Flour
Method
Roll the slip soles in plain flour seasoned with salt & pepper until they are finely coated on both sides.
Melt butter in a pan until it froths with a splash of extra virgin olive oil.
Fry the fillets in butter and oil for a couple of minutes on each side until they turn golden brown.
Squeeze lemon juice over each sole in the pan and remove from the heat.
Serve with a wedge of lemon, steamed tenderstem broccoli and potatoes of your choice.
Sprinkle finely chopped flat-leaf parsley over the slip soles.
